I was asked by a follower why I don’t include nutrition information for my recipes and meal plans. To answer that question that many of you have asked, I don’t include this information because I don’t feel our dinner choices should be guided solely on if it meets a certain nutritional outline. I think we all have a good idea of what provides more nutrients and what foods are less nutrient dense. So I think it’s more helpful and healthful to focus on including foods that we enjoy. And to eat by listening to our bodies. Studies have shown that having calorie information available doesn’t always impact choice. But it does influence internal feelings towards that food, like increases guilt if the food has a certain ingredient that has been classified as “bad”. So it’s my goal with these meal plans to help you enjoy dinners and to find recipes that make you feel good, both mentally and physically. All you need for these one-pot-dinners meal plan is a single pot, a hot stove top, and a few ingredients.

 

One-Pot-Dinners Meal Plan

Meal 1: Salmon with Roasted Tomatoes and Corn

What we like about this meal: Salmon is one of my favorite foods to eat. But I know that’s not the case for many people. So the cherry tomatoes and the corn provide a little bit of sweetness to each bite. Not only is this meal a one-pot meal, it also only takes 20 minutes from start to finish. We add a leafy green salad to the side or saute some spinach.

Meal 2: Potato Hash with Spinach and Eggs

What we like about this meal: After you make this meal one time, you really don’t need a recipe because it’s that simple. One thing I recently learned about eggs is they are a good food for fertility. So if you’re in that stage of your life, eggs can be a great addition to a healthy fertility diet. Whipping up a fruit smoothie is the perfect side for this kind of one-pot meal.

Meal 3: Spanish Chickpeas and Rice

What we like about this meal: I never knew garbanzo beans were also called chickpeas until I moved to Boston when I was 21. And I never liked these legumes as a kid but now as I use them in everything from this one-pot meal to cookies! Artichoke hearts is another ingredient that I can’t get enough of and I always want to add more than what a recipe calls for. It’s probably an internal desire to make up for the 23 years that I didn’t get a chance to eat them.

Meal 4: One Pot Loaded Vegetarian Chili Mac

What we like about this meal: After we make this one, it seems we’re eating chili for days! But that’s not a bad thing since it’s full of veggies. I really enjoy baking. Meal 5: One-Pot Thai Peanut Veggie Pasta

What we like about this meal: Even though my son is a good eater, this one is one of those meals that I know he struggles eating. But each time he gets exposed to it, I see that he enjoys the noodles, the tofu, and sometimes the carrots. It all just depends on the mood that he is in. But personally, the butty flavor is what I really enjoy.
