These Scottish-style scones use an almost equal amount of flour and oats. And even though it’s not apple season right now, I love baking with apples. What makes them Scottish-style? It comes down to texture and the use of less butter.

Instructions
  1. Preheat oven to 400 degrees F.
  2. Prepare your baking sheet by placing a piece of parchment paper on it. Then, lightly flour it.
  3. In a bowl, whisk together flour, oats, brown sugar, cinnamon, baking powder, baking soda, and salt.
  4. Cut in butter with a pastry blender or rub in with your fingers.
  5. Using your hands, mix together well.
  6. Stir in apples and buttermilk until dough comes together.
  7. Turn dough onto baking sheet. Pat dough into a rectangle.
  8. Bake, rotating baking sheet halfway through, until golden brown, for 20-22 minutes.
  9. Let cool on sheet and then cut into squares.
